2 pounds baby Yukon Gold potatoes

1/2 cup unsalted butter, melted

4 cloves garlic, minced

1 tablespoon fresh parsley, chopped

1 tablespoon fresh chives, chopped

1 teaspoon smoked paprika

1 teaspoon chili powder

1 teaspoon onion powder

Salt and pepper to taste

1/2 cup grated Parmesan cheese (optional)

Fresh parsley for garnish

Instructions
 

Boil the Potatoes: Place baby Yukon Gold potatoes in a large pot of salted water. Bring to a boil and cook for about 15-20 minutes or until tender when pierced with a fork.

    Drain and Cool: Once cooked, drain the potatoes and let them cool slightly for easier handling.

      Smash the Potatoes: On a large baking sheet lined with parchment paper, place the potatoes and use a fork or a potato masher to gently smash each potato until it’s about ½ inch thick. Be careful not to break them apart completely.

        Prepare the Cowboy Butter: In a small bowl, mix together the melted butter, minced garlic, parsley, chives, smoked paprika, chili powder, onion powder, salt, and pepper. Stir well to combine.

          Coat the Potatoes: Brush or drizzle the cowboy butter mixture generously over each smashed potato, ensuring each one is well-coated.

            Bake: Preheat the oven to 425°F (220°C). Bake the smashed potatoes for about 20-25 minutes, or until they are golden and crispy.

              Add Cheesiness (optional): For an extra touch, sprinkle grated Parmesan cheese on top in the last 5 minutes of baking until melted and bubbly.

                Garnish and Serve: Remove the potatoes from the oven, garnish with fresh parsley, and serve hot.
