1 lb chicken breast, cut into 1-inch cubes

1/4 cup unsalted butter, melted

2 tablespoons fresh parsley, chopped

1 tablespoon garlic, minced

1 teaspoon smoked paprika

1 teaspoon onion powder

1/2 teaspoon cayenne pepper (adjust for spice level)

Salt and pepper to taste

1 tablespoon lemon juice

1 red bell pepper, cut into 1-inch pieces

1 green bell pepper, cut into 1-inch pieces

1 medium onion, cut into 1-inch pieces

Wooden or metal skewers (if using wooden skewers, soak in water for 30 minutes)

Instructions
 

In a mixing bowl, combine the melted butter, chopped parsley, minced garlic, smoked paprika, onion powder, cayenne pepper, salt, pepper, and lemon juice to create the cowboy butter marinade.

    Add the chicken pieces to the bowl and toss until they are thoroughly coated with the butter mixture. Let it marinate for at least 30 minutes (or up to 2 hours in the refrigerator for extra flavor).

      Preheat your grill or grill pan over medium-high heat.

        Thread the marinated chicken pieces onto skewers, alternating with pieces of red and green bell pepper and onion for color and flavor.

          Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally until the chicken is cooked through and has nice grill marks. Ensure the internal temperature of the chicken reaches 165°F (75°C).
