1 can (15 oz) pinto beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) kidney beans, drained and rinsed

1 medium onion, diced

2 cloves garlic, minced

1 cup corn (canned or frozen)

1 red bell pepper, diced

1-2 jalapeños, seeded and minced (optional, for heat)

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

1 lime, juiced

2 tablespoons olive oil

Salt and pepper to taste

Fresh cilantro for garnish

Instructions
 

In a large skillet, heat the olive oil over medium heat.

    Add the diced onion and cook for about 5 minutes, until translucent.

      Stir in the minced garlic and cook for an additional 1-2 minutes, until fragrant.

        Add the red bell pepper and jalapeños (if using) to the skillet. Sauté for 3-4 minutes until the pepper is slightly softened.

          Stir in the pinto beans, black beans, kidney beans, and corn. Mix well.

            Season the mixture with chili powder, cumin, smoked paprika, salt, and pepper. Cook for another 5 minutes, stirring frequently.

              Squeeze the lime juice over the bean mixture and stir to combine, allowing the flavors to meld for an additional 2 minutes.

                Remove from heat and let it rest for a few minutes.

                  Serve warm, garnished with fresh cilantro for added flavor and color.
