4 ears of corn, husked and halved lengthwise

2 tablespoons olive oil

2 teaspoons smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon cayenne pepper (adjust to taste)

Salt and pepper to taste

1/2 cup BBQ sauce (your favorite brand)

Fresh cilantro, chopped (for garnish)

Optional: lime wedges, for serving

Instructions
 

Preheat your grill or oven to 400°F (200°C). If using a grill, prepare for indirect heat.

    Cut the ears of corn in half lengthwise to create rib-like pieces. You should yield 8 corn “ribs.”

      In a large bowl, combine olive oil, smoked paprika, garlic powder, onion powder, cayenne pepper, salt, and pepper. Toss the corn ribs in the spice mixture until they are evenly coated.

        If using a grill, place the corn ribs on the grill grates over indirect heat. Grill for about 15-20 minutes, turning occasionally. If using an oven, spread them on a baking sheet lined with parchment paper and roast for about 25-30 minutes, flipping halfway through.

          In the last few minutes of cooking, brush the corn ribs generously with BBQ sauce and allow them to caramelize on the grill or in the oven for an additional 3-5 minutes.

            Once cooked, remove the corn ribs from the heat and let them cool slightly.

              Serve warm, garnished with freshly chopped cilantro and lime wedges on the side for an extra zesty flavor.
