2 cups fresh corn kernels (or 1 can of corn, drained)

1/2 cup all-purpose flour

1/2 cup cornmeal

2 large eggs

1/4 cup milk

1/4 cup green onions, finely chopped

1/4 cup red bell pepper, finely diced

1 teaspoon baking powder

1 teaspoon garlic powder

1/2 teaspoon paprika

Salt and pepper to taste

Oil for frying (vegetable or canola)

Instructions
 

In a large mixing bowl, combine the fresh corn kernels, flour, cornmeal, eggs, and milk. Stir until well blended.

    Add the chopped green onions, diced red bell pepper, baking powder, garlic powder, paprika, salt, and pepper to the mixture. Fold everything together until combined; the mixture should be thick and slightly lumpy.

      Heat about 1/4 inch of oil in a non-stick skillet over medium heat. To test if the oil is ready, drop a small spoonful of batter into the oil—if it sizzles, the oil is hot enough.

        Use a tablespoon to scoop the batter and carefully drop it into the hot oil, flattening slightly to form fritters. Fry in batches, making sure not to overcrowd the pan.

          Cook each fritter for about 3-4 minutes on each side or until golden brown and crispy.

            Use a slotted spoon to remove fritters from the oil and place them on paper towels to drain excess oil.

              Serve warm with a dipping sauce or a dollop of sour cream.
