4 boneless, skinless chicken breasts

1 cup grated Parmesan cheese

1 cup panko breadcrumbs

1 tablespoon garlic powder

1 teaspoon onion powder

1 teaspoon dried Italian herbs (basil, oregano, thyme)

2 large eggs

1/4 cup mayonnaise

1 tablespoon Dijon mustard

Salt and pepper to taste

Olive oil for drizzling

Fresh parsley, chopped (for garnish)

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    In a shallow bowl, combine the grated Parmesan cheese, panko breadcrumbs, garlic powder, onion powder, dried Italian herbs, salt, and pepper. Mix well to create your crust mixture.

      In another bowl, whisk together the eggs, mayonnaise, and Dijon mustard until smooth.

        Dip each chicken breast into the egg mixture, ensuring it is well coated. Allow the excess to drip off.

          Next, press each chicken breast into the Parmesan crust mixture, coating them thoroughly on both sides. Place the coated chicken on the prepared baking sheet.

              Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the crust is golden brown.
