2 snapper fillets (about 6 oz each)

1 can (400 ml) coconut milk

2 tablespoons red curry paste

1 tablespoon ginger, minced

2 garlic cloves, minced

1 tablespoon fish sauce

1 tablespoon brown sugar

1 small red bell pepper, sliced

1 cup spinach leaves

1 lime (juice and zest)

Fresh cilantro leaves for garnish

2 tablespoons vegetable oil

Salt and pepper to taste

In a large skillet, heat the vegetable oil over medium heat.

    Add the minced ginger and garlic to the skillet, cooking until fragrant (about 1 minute).

      Stir in the red curry paste and cook for another minute, allowing the spices to bloom.

        Pour in the coconut milk, mixing until the curry paste is fully incorporated.

          Add the fish sauce and brown sugar, stirring well. Bring the mixture to a gentle simmer.

            Season the snapper fillets with salt and pepper, then gently place them in the skillet. Cover and let cook for about 6-8 minutes, or until the fish is opaque and flakes easily with a fork.

              In the last 2-3 minutes of cooking, add the sliced red bell pepper and spinach leaves to the skillet, allowing them to wilt in the sauce.

                Remove from heat and stir in the lime juice and zest for added freshness.

                  Serve the snapper topped with cilantro leaves.
