4 salmon fillets (about 6 oz each)

1 can (13.5 oz) coconut milk

2 tablespoons red curry paste

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 tablespoon fish sauce (optional)

1 tablespoon lime juice

1 tablespoon olive oil

1 cup baby spinach

Salt and pepper, to taste

Fresh cilantro, for garnish

Cooked rice or quinoa, for serving

Prepare the Salmon: Season the salmon fillets with salt and pepper on both sides.

    Sauté Aromatics: In a large skillet over medium heat, add olive oil. Once hot, add the minced garlic and grated ginger. Sauté for about 1-2 minutes until fragrant, being careful not to burn them.

      Add Curry Paste: Stir in the red curry paste and cook for an additional minute, allowing it to toast slightly and deepen in flavor.
