4 salmon fillets (about 6 oz each)

1 can (14 oz) coconut milk

2 tablespoons red curry paste

1 tablespoon fish sauce

1 tablespoon brown sugar

1 tablespoon lime juice

2 tablespoons unsalted butter

4 cloves garlic, minced

1 cup kale or spinach, chopped

1 tablespoon fresh cilantro, chopped (for garnish)

Salt and pepper to taste

Cooked jasmine rice (for serving)

Prepare the Garlic Butter: In a small saucepan, melt 2 tablespoons of butter over medium heat. Add minced garlic and sauté for about 1-2 minutes until fragrant and just browned. Remove from heat and set aside.

    Make the Coconut Curry Sauce: In a medium saucepan, combine coconut milk, red curry paste, fish sauce, brown sugar, and lime juice. Stir well and bring to a gentle simmer over medium heat. Let it cook for 5 minutes until slightly thickened, stirring occasionally.

      Cook the Salmon: In a large skillet, heat a drizzle of olive oil over medium-high heat. Season salmon fillets with salt and pepper. Place the salmon in the skillet, skin side down (if applicable), and cook for 4-5 minutes until the skin is crispy. Flip the fillets and pour half of the coconut curry sauce over them. Cook for an additional 3-4 minutes, or until salmon is cooked through and flakes easily with a fork.

        Add Greens: In the last minute of cooking the salmon, add the chopped kale or spinach to the skillet, allowing it to wilt in the remaining sauce.
