1 lb ground beef

1 small onion, diced

2 cloves garlic, minced

1 cup frozen mixed vegetables (peas, corn, carrots)

1 can (10.5 oz) cream of mushroom soup

1 cup beef broth

2 teaspoons soy sauce

1 teaspoon black pepper

1 teaspoon garlic powder

1 teaspoon onion powder

3 cups frozen tater tots

1 cup shredded cheddar cheese

Fresh parsley for garnish

Instructions
 

Preheat your oven to 400°F (200°C).

    In a large skillet over medium heat, brown the ground beef with the diced onion until the meat is cooked through and the onion is translucent, about 5 minutes. Drain excess grease if necessary.

      Add minced garlic and cook for an additional 1-2 minutes until fragrant.

        Stir in the frozen mixed vegetables, cream of mushroom soup, beef broth, soy sauce, black pepper, garlic powder, and onion powder. Mix well until combined and heated through, about 5 minutes.

          Transfer the mixture to a 9x13-inch baking dish, spreading it evenly across the bottom.

            Arrange the frozen tater tots in a single layer on top of the beef and vegetable mixture. Make sure they're evenly spread for a crispy finish.

              Bake in the preheated oven for 25-30 minutes or until the tater tots are golden brown and crispy.

                Once cooked, remove from the oven and sprinkle shredded cheddar cheese evenly over the top. Return to the oven for an additional 5-7 minutes, until the cheese is melted and bubbly.

                  Remove from the oven and let it cool for a few minutes before serving. Garnish with fresh parsley for a pop of color.
