Ingredients

4 cups romaine lettuce, chopped

2 cups cooked chicken breast, diced

4 strips of crispy bacon, crumbled

2 hard-boiled eggs, chopped

1 avocado, diced

1 cup cherry tomatoes, halved

1/2 cup blue cheese, crumbled

1/4 cup red onion, thinly sliced

1/4 cup red wine vinegar

1/4 cup olive oil

1 teaspoon Dijon mustard

Salt and pepper to taste

Instructions

Start by preparing the dressing: in a small bowl, whisk together the red wine vinegar, olive oil, Dijon mustard, salt, and pepper until well combined and emulsified. Set aside.

In a large salad bowl, layer the chopped romaine lettuce as the base.

Arrange the diced chicken breast in one section of the bowl.

Next to the chicken, create a section for the crumbled bacon.

On the opposite side of the chicken and bacon, add the chopped hard-boiled eggs.

Follow with the diced avocado and then the halved cherry tomatoes.

Sprinkle the crumbled blue cheese over the entire salad.

Finally, distribute the thinly sliced red onion evenly across the salad.

Drizzle the prepared dressing over the salad, or serve it on the side for guests to add their own.

Gently toss all the ingredients just before serving to combine flavors.
