4 pork sausages (choose your favorite type)

2 pounds Yukon Gold potatoes, peeled and cut into chunks

2 tablespoons unsalted butter

½ cup milk

Salt and pepper to taste

2 large onions, thinly sliced

2 tablespoons olive oil

2 cups beef broth

1 tablespoon Worcestershire sauce

1 tablespoon all-purpose flour

Fresh parsley, chopped (for garnish)

Cook the Potatoes: Place the potato chunks in a large pot and cover with cold salted water. Bring to a boil and cook until tender, about 15-20 minutes. Drain and return to the pot.

    Make the Mashed Potatoes: Add butter and milk to the drained potatoes. Mash until smooth and creamy, seasoning with salt and pepper to taste. Keep warm.

      Caramelize the Onions: In a skillet, heat olive oil over medium heat. Add the sliced onions and a pinch of salt. Cook, stirring occasionally, for about 15-20 minutes until the onions are golden brown and caramelized. Set aside.

        Cook the Sausages: In the same skillet, add the sausages and cook over medium-high heat, turning occasionally until browned and cooked through (about 8-10 minutes). Remove sausages and keep warm.

          Prepare the Gravy: In the same skillet, sprinkle flour over the remaining fat and drippings. Stir for 1 minute to cook the flour slightly. Gradually whisk in the beef broth and Worcestershire sauce, allowing the gravy to thicken (about 3-5 minutes). Season with salt and pepper.

            Combine and Serve: To plate, create a generous mound of mashed potatoes at the center of each plate. Top with the sausages, spoon over the rich gravy, and add a handful of caramelized onions on top.

              Garnish: Sprinkle with fresh parsley for a pop of color.
