Ingredients

1 small cauliflower, cut into florets

1 cup cooked diced turkey (leftover or roasted)

3 large eggs

1 cup milk (whole or low-fat)

1 cup all-purpose flour

1/2 cup grated parmesan cheese

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

Fresh parsley, chopped, for garnish

Instructions

Preheat your oven to 375°F (190°C) and grease a 9-inch pie dish or a rectangular baking dish with olive oil.

Bring a pot of salted water to a boil. Add the cauliflower florets and blanch for 3-4 minutes until just tender, then drain and set aside.

In a mixing bowl, whisk together the eggs, milk, garlic powder, onion powder, salt, and pepper until well combined.

Gradually add the flour to the egg mixture, whisking until smooth and lump-free. Then stir in the grated parmesan cheese.

Layer the blanched cauliflower florets and diced turkey evenly in the greased baking dish.

Pour the batter over the cauliflower and turkey, ensuring everything is evenly distributed.

Bake the clafoutis in the preheated oven for 30-35 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.

Remove from the oven and let it cool for a few minutes before slicing. Garnish with fresh chopped parsley before serving.
