1 cup unsalted butter, softened

1 ½ cups granulated sugar

1 teaspoon vanilla extract

2 large eggs

3 cups all-purpose flour

2 teaspoons baking powder

1 teaspoon ground cinnamon

½ teaspoon salt

8 oz cream cheese, softened

½ cup powdered sugar

1 tablespoon milk

½ cup granulated sugar (for coating)

2 teaspoons cinnamon (for coating)

Instructions
 

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

    In a large mixing bowl, cream together the softened butter and 1 ½ cups of granulated sugar until light and fluffy, about 2-3 minutes.

      Add the vanilla extract and then the eggs, one at a time, mixing well after each addition.

        In another bowl, whisk together the flour, baking powder, ground cinnamon, and salt. Gradually add this mixture to the wet ingredients, mixing until just combined.

          In a separate bowl, beat together the cream cheese, powdered sugar, and milk until smooth and creamy.

            Using a cookie scoop, scoop out portions of cookie dough and flatten each scoop slightly in your hand. Place about a teaspoon of the cream cheese filling in the center of the dough, then fold the edges around to seal and form a ball.

              Roll each ball in granulated sugar mixed with the reserved cinnamon to coat evenly.

                Place the cookie balls on the prepared baking sheets, spacing them about 2 inches apart.

                  Bake for 12-15 minutes or until the edges are lightly golden. The centers will remain soft.

                    Allow the cookies to cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
