1 large ciabatta loaf or focaccia bread

1 cup salami, chopped

1 cup ham, chopped

1 cup provolone cheese, cubed

1 cup roasted red peppers, sliced

ΒΌ cup green olives, chopped

1 small red onion, finely chopped

1 cup arugula or spinach

2 tablespoons olive oil

1 tablespoon balsamic vinegar

1 teaspoon dried oregano

Salt and pepper to taste

Begin by slicing the ciabatta loaf in half horizontally. If using focaccia, you may want to slice it into squares or rectangles.

    In a medium mixing bowl, combine the chopped salami, ham, provolone cheese, roasted red peppers, green olives, and red onion.

      Drizzle the olive oil and balsamic vinegar over the meat and cheese mixture. Add the oregano, salt, and pepper, and toss everything together until well incorporated.

        Layer a generous handful of arugula or spinach on the bottom half of the bread.

          Spoon the chopped filling evenly over the greens, pressing down gently to pack it in.

            Top with the other half of the bread and compress the sandwich slightly, then wrap it tightly in parchment paper or foil.

              Let the sandwich rest in the refrigerator for at least 30 minutes to allow the flavors to meld together.
