1 lb ground beef (80/20 for optimal flavor)

1 small onion, diced

1 small green bell pepper, diced

4 slices American cheese (or your favorite cheese)

4 hoagie rolls or personal-sized hero rolls

2 tablespoons mayonnaise

2 tablespoons ketchup

1 tablespoon yellow mustard

Salt and pepper, to taste

Cooking oil for sautéing

Optional: lettuce, tomato, pickles for garnishing

Sauté the Veggies: In a large skillet over medium heat, add a drizzle of cooking oil. Once hot, add the diced onions and green bell pepper. Sauté for about 3-4 minutes, until they are soft and fragrant.

    Cook the Beef: Increase the heat to medium-high, add the ground beef to the skillet, and break it up with a spatula. Season with salt and pepper. Cook until the beef is browned and fully cooked through, about 5-7 minutes.

      Chop and Mix: While the beef is cooking, use your spatula to chop the mixture into smaller pieces while stirring. This helps integrate the veggies into the meat.

        Add the Cheese: Once the beef is browned, lower the heat to medium. Place the slices of cheese on top of the meat mixture. Cover the skillet with a lid for about 2 minutes, allowing the cheese to melt.

          Prepare the Rolls: While the cheese is melting, slice the hoagie rolls lengthwise but not all the way through (creating a hinge). Toast them lightly on a separate skillet or under a broiler for 1-2 minutes if desired.

            Build the Sandwich: Spread mayonnaise, ketchup, and mustard inside each toasted roll. Spoon the chopped cheese mixture generously into each roll, ensuring each has a good amount of the melted cheese and veggies.
