1 cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

2 ¾ cups all-purpose flour

1 teaspoon baking powder

½ teaspoon salt

1 cup dried strawberries, chopped

1 cup semi-sweet chocolate chips

1 tablespoon coconut oil (for melting chocolate)

Sea salt flakes (for garnish)

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.

      Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

        In a separate bowl, combine the flour, baking powder, and salt. Gradually add this dry mixture to the wet ingredients, mixing until just combined.

          Gently fold in the chopped dried strawberries until they are evenly distributed throughout the dough.

            Using a tablespoon or cookie scoop, drop cookie dough onto the prepared baking sheet, spacing them about 2 inches apart.

              Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden. Remove from the oven and allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

                Meanwhile, in a microwave-safe bowl, combine the semi-sweet chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until the chocolate is fully melted and smooth.

                  Once the cookies have cooled, dip the tops of each cookie into the melted chocolate, allowing any excess to drip off. Place the cookies back on the wire rack.

                    While the chocolate is still wet, sprinkle a pinch of sea salt flakes on top for an extra touch of flavor. Allow the chocolate to set at room temperature or in the refrigerator for about 30 minutes.
