1 cup all-purpose flour

1/2 cup cocoa powder

1/4 cup sugar

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 cup water

1/4 cup vegetable oil

1 teaspoon vanilla extract

1 cup unsweetened chocolate ganache (made from 4 oz bittersweet chocolate and 1/2 cup heavy cream)

1/4 cup sugar (for coating)

2 teaspoons cinnamon (for coating)

Vegetable oil, for frying

Prepare the Chocolate Ganache: In a small saucepan, heat heavy cream over medium heat until just simmering. Remove from heat, add chopped bittersweet chocolate, and let it sit for 5 minutes. Stir until smooth and set aside to cool.

    Make the Churro Dough: In a mixing bowl, whisk together the flour, cocoa powder, sugar, baking powder, and salt. In a separate bowl, combine the water, vegetable oil, and vanilla extract. Gradually add the wet ingredients to the dry ingredients, mixing until a dough forms.

      Shape the Pies: On a floured surface, roll out the dough to about 1/4-inch thickness. Using a round cutter (3 inches in diameter), cut out circles. Re-roll scraps as needed.

        Fill the Churro Pies: Place a tablespoon of chocolate ganache in the center of half of the dough circles. Brush the edges with a little water, then top with another dough circle and press to seal. Use a fork to crimp the edges for extra sealing.

          Heat the Oil: In a large skillet or deep fryer, heat about 2 inches of vegetable oil to 350°F (175°C).

            Fry the Pies: Carefully place a few pies into the hot oil, frying for about 2-3 minutes on each side or until golden brown. Remove and drain on paper towels.

              Coat with Cinnamon Sugar: In a small bowl, combine sugar and cinnamon. While the churro pies are still warm, coat them in the cinnamon-sugar mixture.
