Ingredients

1 lb (450g) beef sirloin, thinly sliced against the grain

2 large onions, thinly sliced

3 cloves garlic, minced

1-inch piece fresh ginger, grated

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon cornstarch

1 tablespoon vegetable oil

1 tablespoon sesame oil

1 tablespoon brown sugar

Salt and pepper to taste

1 teaspoon black pepper (or more, to taste)

1 cup snap peas (or bell peppers, for color)

2 green onions, sliced for garnish

Cooked jasmine rice or noodles for serving

Instructions

In a medium bowl, combine the thinly sliced beef with soy sauce, oyster sauce, cornstarch, brown sugar, black pepper, and a pinch of salt. Mix well and let it marinate for 15 minutes.

Heat the vegetable oil in a large skillet or wok over medium-high heat. Once hot, add the marinated beef and stir-fry for 2-3 minutes or until browned but not fully cooked. Remove the beef from the skillet and set it aside.

In the same skillet, add a little more oil if needed, then toss in the sliced onions. Stir-fry for about 4-5 minutes until they start to caramelize and become trameolo soft.

Add the minced garlic and grated ginger to the onions, stirring constantly for 30 seconds until fragrant.

Bring back the beef to the skillet and add in snap peas or bell peppers. Stir everything together and cook for another 2-3 minutes or until the beef is fully cooked and the snap peas/peppers are tender-crisp.

Drizzle sesame oil over the stir-fry, tossing to combine all the flavors and ingredients. Adjust seasoning with salt and pepper to taste.

Serve the beef and onion stir-fry over jasmine rice or noodles, garnished with sliced green onions on top.
