1 cup shredded sharp cheddar cheese

1 cup shredded pepper jack cheese

1 cup cream cheese

1 can (15 oz) black beans, rinsed and drained

1 can (10 oz) diced tomatoes with green chilies

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon ground cumin

½ teaspoon smoked paprika

½ teaspoon cayenne pepper (adjust to taste)

½ cup milk (or more as needed for consistency)

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Tortilla chips (for serving)

Instructions
 

In a medium-sized skillet over medium heat, add the chopped onion and minced garlic. Sauté for 3-4 minutes, until the onion is translucent and fragrant.

    Add the black beans, diced tomatoes with green chilies, ground cumin, smoked paprika, and cayenne pepper to the skillet. Stir well and let it cook for 5 minutes, allowing the flavors to meld together.

      Lower the heat and add the cream cheese to the mixture, stirring until it has completely melted and is well combined.

        Gradually add the shredded cheddar and pepper jack cheeses, along with the milk. Stir continuously until all the cheese has melted and the dip is creamy. If the mixture is too thick, add more milk a little at a time until the desired consistency is reached.

          Season the dip with salt and pepper to taste, stirring to incorporate.

            Remove from heat and transfer the dip to a serving bowl. Garnish with chopped fresh cilantro.
