1 pound ground chicken

1 cup finely chopped shiitake mushrooms

1/2 cup green onion, chopped

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

2 tablespoons soy sauce

1 tablespoon sesame oil

1 teaspoon chili garlic paste

24 round wonton wrappers

Oil for frying

1 cup shredded lettuce

1 cup diced tomatoes

1/2 cup shredded cheese (cheddar or pepper jack)

Cilantro for garnish

Lime wedges for serving

Instructions
 

In a large skillet over medium heat, add the sesame oil. Once hot, add minced garlic and grated ginger, sautéing for about 1 minute until fragrant.

    Add the ground chicken to the skillet, breaking it apart with a wooden spoon. Cook until browned, about 5-7 minutes.

      Stir in the chopped shiitake mushrooms, green onion, soy sauce, and chili garlic paste. Cook for another 3-4 minutes until mushrooms are tender and chicken is cooked through. Remove from heat and allow to cool slightly.

        While the chicken mixture cools, heat oil in a deep pan or fryer to 350°F (175°C).

          Gently press a wonton wrapper into a taco mold or shape it over the back of a muffin tin to create a taco shell. Fry for about 1-2 minutes or until golden and crispy. Remove and drain on paper towels.

            Once all wonton shells are fried, fill each shell with the chicken mixture.

              Top with shredded lettuce, diced tomatoes, and shredded cheese. Garnish with fresh cilantro.

                Serve warm with lime wedges on the side for squeezing over the tacos.
