1 medium onion, chopped

4 cloves garlic, minced

1 red bell pepper, diced

1 teaspoon ground cumin

1 teaspoon smoked paprika

4 cups chicken broth

2 cups cooked chicken, shredded

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) diced tomatoes with green chilies

1 cup corn (fresh or frozen)

Salt and pepper to taste

Juice of 1 lime

1 avocado, diced

Tortilla strips for garnish

Fresh cilantro for garnish

Optional jalapeño slices for heat

Sauté Vegetables: In a large pot, heat olive oil over medium heat. Add the chopped onion and cook until translucent, about 5 minutes. Stir in the minced garlic and diced red bell pepper, cooking for an additional 2-3 minutes.

    Add Spices: Sprinkle in the ground cumin and smoked paprika, and stir until fragrant (about 1 minute).

      Combine Broth and Chicken: Pour in the chicken broth and bring to a boil. Once boiling, reduce heat to a simmer and add the shredded chicken, black beans, diced tomatoes with green chilies, and corn.

        Simmer: Allow the soup to simmer uncovered for 15-20 minutes, letting the flavors meld together. Season with salt and pepper to taste.

          Finish with Lime: Just before serving, stir in the lime juice for extra freshness.
