In a large skillet, heat olive oil over medium heat. Add the diced chicken breasts and season with salt, pepper, and smoked paprika. Cook for about 5-7 minutes until the chicken is golden and cooked through. Remove the chicken from the skillet and set aside.
In the same skillet, add the chopped red onion and bell pepper. Sauté for about 3-4 minutes until they start to soften.
Add the cubed sweet potatoes and continue to cook for another 7-10 minutes, stirring occasionally, until the sweet potatoes are tender. You may add a splash of water to steam them if needed.
Stir in the minced garlic, dried oregano, and cayenne pepper, cooking for an additional 1-2 minutes until fragrant.
Return the cooked chicken to the skillet and mix everything thoroughly. Taste and adjust seasoning as needed.
Remove from heat and garnish with fresh parsley before serving.
