Ingredients
  

1 lb chicken thighs, boneless and skinless, cubed

1 tablespoon olive oil

1 medium onion, diced

2 cloves garlic, minced

3 medium carrots, sliced

2 celery stalks, chopped

1 teaspoon dried thyme

1 teaspoon dried parsley

6 cups low-sodium chicken broth

1 cup frozen peas

1 cup egg noodles (optional)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent.

    Stir in the minced garlic and cook for another minute until fragrant.

      Add the cubed chicken thighs to the pot, season with salt and pepper, and cook until browned on all sides, about 5-7 minutes.

        Mix in the sliced carrots and chopped celery, then sprinkle with thyme and parsley. Stir everything together for another 2 minutes.

          Pour in the chicken broth and bring the mixture to a boil. Once boiling, reduce the heat to low and simmer for 20 minutes.

            If using egg noodles, add them after 20 minutes and cook for another 7-10 minutes until tender.

              Stir in the frozen peas and let them heat through for about 3 minutes. Adjust seasoning with salt and pepper as needed.

                Remove from heat and serve hot, garnished with fresh parsley.
