1 lb (450g) chicken breast, cut into small pieces

1 tablespoon vegetable oil

1 medium onion, chopped

3 cloves garlic, minced

1 medium carrot, diced

1 cup cabbage, chopped

1 cup celery, diced

4 cups chicken broth

1 cup macaroni pasta

1 cup evaporated milk

Salt and pepper to taste

1/2 teaspoon ground black pepper

2 green onions, sliced (for garnish)

1/4 cup grated cheese (optional, for a twist)

Instructions
 

In a large pot, heat vegetable oil over medium heat. Add chopped onion and garlic, sautéing until the onion is translucent.

    Add the diced chicken breast to the pot, cooking until the chicken is browned on all sides.

      Stir in the diced carrots and celery, cooking for another 3-4 minutes until they start to soften.

        Pour in the chicken broth and bring the mixture to a boil.

          Once boiling, add the macaroni pasta and cook according to package instructions until al dente.

            Lower the heat and stir in the chopped cabbage and evaporated milk. Allow the sopas to simmer for about 5-10 minutes, or until the cabbage is tender.

              Season with salt, ground black pepper, and any additional seasonings you desire.

                For a cheesy twist, stir in grated cheese until melted and well incorporated.

                  Serve the sopas hot, garnished with sliced green onions on top.
