4 boneless, skinless chicken thighs

1/4 cup olive oil

3 cloves garlic, minced

1/4 cup fresh parsley, chopped

1 tablespoon fresh oregano, chopped (or 1 teaspoon dried)

1 teaspoon red pepper flakes

Juice of 2 lemons

Salt and pepper to taste

Lemon wedges for serving

Instructions
 

Start by marinating the chicken: In a bowl, whisk together olive oil, minced garlic, chopped parsley, oregano, red pepper flakes, lemon juice, salt, and pepper.

    Add the chicken thighs to the marinade, ensuring they are nicely coated. Cover the bowl and let it marinate in the refrigerator for at least 30 minutes or up to 2 hours for more flavor.

      Preheat your grill or grill pan over medium-high heat.

        Remove the chicken from the marinade, allowing any excess marinade to drip off, and place it on the grill.

          Grill the chicken for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C) and the chicken is nicely charred.

            While the chicken is grilling, you can heat the remaining marinade in a small saucepan over low heat to use as a dipping sauce.

              Once the chicken is cooked, remove it from the grill and let it rest for about 5 minutes to retain its juices before slicing.

                Serve the sliced chicken on a platter, drizzled with the warmed marinade and garnished with extra parsley and lemon wedges on the side.
