Ingredients

2 boneless, skinless chicken breasts, thinly sliced

150g ramen noodles (fresh or dried)

1 tablespoon soy sauce

1 tablespoon oyster sauce

1 teaspoon sesame oil

1 red bell pepper, sliced

1 cup broccoli florets

1 carrot, julienned

3 green onions, sliced

2 cloves garlic, minced

1 tablespoon ginger, minced

2 tablespoons vegetable oil

Salt and pepper to taste

Sesame seeds for garnish

Instructions

Begin by cooking the ramen noodles according to package instructions. If using dried noodles, boil them for about 4-5 minutes until al dente, then drain and set aside. If using fresh noodles, just separate them and set aside.

In a large skillet or wok, heat the vegetable oil over medium-high heat. Once hot, add the sliced chicken breast and stir-fry for about 4-5 minutes until golden brown and cooked through. Season with salt and pepper.

Add the minced garlic and ginger to the skillet and stir-fry for an additional minute until fragrant.

Toss in the sliced red bell pepper, broccoli florets, and julienned carrot. Stir-fry the vegetables for about 3-4 minutes until they start to soften but still retain some crunch.

Add the cooked ramen noodles to the skillet and toss everything together.

In a small bowl, combine soy sauce, oyster sauce, and sesame oil; pour this mixture over the chicken and vegetables in the pan. Toss everything together until well coated and heated through, about 2-3 minutes.

Remove from heat and sprinkle sliced green onions and sesame seeds on top before serving.
