2 cups cooked chicken, shredded

1 cup ricotta cheese

1 cup mozzarella cheese, shredded

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon Italian seasoning

Salt and pepper to taste

1 package (14 oz) puff pastry sheets, thawed

1 egg, beaten (for egg wash)

1 cup marinara sauce (for serving)

Fresh basil leaves (for garnish)

Instructions
 

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    In a large mixing bowl, combine the shredded chicken, ricotta cheese, mozzarella cheese, Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper. Mix until well incorporated.

      On a lightly floured surface, roll out the puff pastry sheets to your desired thickness (about 1/8 inch). Cut each sheet into 4 equal squares (or circles for a different shape).

        Place a tablespoon of the chicken mixture in the center of each pastry piece.

          Carefully fold the pastry over the filling to create a pillow shape, pressing the edges together to seal. Use a fork to crimp the edges for an extra secure seal.

            Brush the tops of each pastry pillow with the beaten egg to give a golden color when baked.

              Place the pillows on the prepared baking sheet and bake in the preheated oven for 15-20 minutes or until golden brown and puffed up.

                While they are baking, heat the marinara sauce in a small saucepan over medium heat.

                  Once the pillows are baked, remove them from the oven and let them cool slightly before serving.
