Ingredients

1 pound ground chicken

1 cup breadcrumbs (preferably Italian seasoned)

1/2 cup grated Parmesan cheese

1/2 cup shredded mozzarella cheese

1/4 cup fresh parsley, chopped

1 large egg

3 cloves garlic, minced

1/2 teaspoon onion powder

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

2 cups marinara sauce

Olive oil for frying

Instructions

In a large mixing bowl, combine the ground chicken, breadcrumbs, grated Parmesan cheese, shredded mozzarella, chopped parsley, egg, minced garlic, onion powder, oregano, salt, and black pepper. Mix until well combined.

Preheat your oven to 400°F (200°C).

Roll the mixture into 1.5-inch meatballs and set aside on a parchment-lined tray.

In a large skillet, heat a few tablespoons of olive oil over medium heat. Once hot, add the meatballs in batches, being careful not to overcrowd the pan. Fry until they are golden on all sides, about 5-6 minutes.

Transfer the browned meatballs to a baking dish.

Pour the marinara sauce over the meatballs, ensuring they are well covered.

Sprinkle additional shredded mozzarella cheese on top, if desired.

Bake in the preheated oven for about 15-20 minutes, or until the meatballs are cooked through (internal temperature should reach 165°F or 75°C).

Remove from the oven, let them cool slightly, and serve.

                    Prep Time: 15 mins | Total Time: 50 mins | Servings: 4

                      - Presentation Tips: Serve the meatballs over cooked spaghetti or in a sub roll. Garnish with extra parsley and freshly grated Parmesan cheese for a lovely touch!
