2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

2 carrots, sliced

2 celery stalks, sliced

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 bay leaf

6 cups chicken broth

2 cups cooked chicken, shredded (rotisserie chicken works great)

1.5 cups egg noodles

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

In a large pot or Dutch oven, heat the olive oil over medium heat.

    Add the diced onion and sauté for 3-5 minutes until translucent.

      Stir in the minced garlic, sliced carrots, and celery. Cook for another 5 minutes until the vegetables begin to soften.

        Add the dried thyme, rosemary, and bay leaf, letting the herbs cook with the vegetables for about 1 minute.

          Pour in the chicken broth and bring the mixture to a boil.

            Once boiling, lower the heat to a simmer and add the shredded chicken.

              Stir in the egg noodles and continue to simmer for 10-12 minutes, or until the noodles are tender.

                Season with salt and pepper to taste. Remove the bay leaf before serving.

                  Serve hot, garnished with fresh chopped parsley for a burst of color and flavor.
