1 pound chicken breast, thinly sliced

4 slices of ham (such as prosciutto or deli ham)

4 slices of Swiss cheese

1 cup breadcrumbs (Panko preferred for crunch)

1/2 cup all-purpose flour

2 large eggs

2 tablespoons Dijon mustard

1 tablespoon olive oil

Salt and pepper to taste

Cooking spray or oil for baking

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. Spray lightly with cooking spray or brush with olive oil to prevent sticking.

    Prepare the Chicken: Flatten the chicken breast slices with a meat mallet or rolling pin until they are about 1/4 inch thick. Season both sides with salt and pepper.

      Assemble: Lay out one slice of ham and one slice of Swiss cheese on each piece of flattened chicken. Carefully roll them up tightly, starting from one end. Secure with toothpicks if necessary.

        Dredge the Bites: Set up a breading station. Place the flour in one shallow dish, beat the eggs and Dijon mustard together in another shallow dish, and place the breadcrumbs in a third dish.

          - First, dip each chicken roll in the flour, making sure to shake off the excess.

            - Next, dip into the egg mixture, allowing excess to drip off.

              - Finally, roll in the breadcrumbs, pressing gently to adhere.

                Bake: Arrange the breaded chicken rolls on the prepared baking sheet. Lightly spray the tops with cooking spray or drizzle with a little olive oil. Bake in the preheated oven for 20-25 minutes, or until golden brown and the chicken is cooked through (internal temperature should reach 165°F or 74°C).
