2 cloves garlic, minced

1 cup cherry tomatoes, halved

1 teaspoon balsamic vinegar

1 teaspoon dried basil (or 2 tablespoons fresh basil, chopped)

1 cup fresh mozzarella cheese, cubed or sliced

Fresh basil leaves for garnish

Prepare the Chicken: Season the chicken breasts with salt and pepper on both sides.

    Brown the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and cook for about 6-7 minutes on each side until golden brown and cooked through. (Internal temperature should reach 165°F/75°C). Remove the chicken from the skillet and set aside.

      Sauté Garlic and Tomatoes: In the same skillet, reduce the heat to medium. Add minced garlic and sauté for about 30 seconds until fragrant. Then, add the halved cherry tomatoes and cook for about 3-4 minutes, or until they begin to soften.

        Add Balsamic and Basil: Stir in the balsamic vinegar and dried (or fresh) basil. Let it simmer for 1-2 minutes to combine the flavors.

          Combine and Melt Cheese: Return the chicken to the skillet, nestling it among the tomatoes. Top with fresh mozzarella. Cover the skillet and let it cook for another 2-3 minutes, until the cheese is melted and bubbly.
