In a large mixing bowl, combine the shredded chicken, diced red and yellow bell peppers, garlic powder, onion powder, smoked paprika, ranch dressing, and half of the shredded cheddar cheese. Mix thoroughly until everything is well-coated.
Season the mixture with salt and pepper according to your taste.
Lay a large flour tortilla on a flat surface. If desired, add a handful of baby spinach in the center of the tortilla.
Spoon about a cup of the chicken and bell pepper mixture onto the center of the tortilla.
Fold the sides of the tortilla over the filling, then tightly roll from the bottom to create a burrito shape.
Repeat the process with the remaining tortillas and filling.
Optional: Heat a skillet over medium heat and lightly toast each burrito for 2-3 minutes on each side until golden brown and crispy.
Once all burritos are prepared, slice them in half diagonally for serving.
Sprinkle the remaining cheddar cheese on top of each burrito if desired, and serve with extra ranch dressing on the side.
