Ingredients
  

2 cups cooked chicken, shredded

1 cup long-grain rice, rinsed

1 tablespoon olive oil

1 onion, diced

3 cloves garlic, minced

2 carrots, diced

2 stalks celery, diced

6 cups chicken broth

1 teaspoon dried thyme

1 bay leaf

Salt and pepper to taste

2 cups baby spinach

1 tablespoon lemon juice

Fresh parsley, chopped (for garnish)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté for about 5 minutes until the vegetables are tender and the onion is translucent.

    Add the minced garlic and stir for an additional minute until fragrant.

      Pour in the chicken broth and bring to a boil. Once boiling, add the rinsed rice, dried thyme, bay leaf, and season with salt and pepper.

        Lower the heat to a simmer and cook for about 15 minutes, or until the rice is fully cooked.

          Stir in the shredded chicken and baby spinach, allowing the spinach to wilt. Cook for another 5 minutes to heat through.

            Remove from heat, discard the bay leaf, and stir in the lemon juice for a fresh kick.

              Serve the soup hot, garnished with fresh parsley.
