2 cups cooked chicken, shredded

1 cup frozen mixed vegetables (carrots, peas, corn)

1 can (10.5 oz) cream of chicken soup

1 cup chicken broth

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1 teaspoon dried thyme

Salt and pepper to taste

2 cups biscuit mix (such as Bisquick)

2/3 cup milk

1/2 cup shredded cheddar cheese

Fresh parsley for garnish (optional)

Instructions
 

Preheat your oven to 375°F (190°C).

    In a large mixing bowl, combine the shredded chicken, frozen mixed vegetables, cream of chicken soup, chicken broth, garlic powder, onion powder, thyme, salt, and pepper. Mix well until all ingredients are combined.

      Transfer the chicken and vegetable mixture to a greased 9x13 inch baking dish, spreading it evenly across the bottom.

        In a separate bowl, prepare the dumpling batter by mixing the biscuit mix and milk together until just combined. Do not overmix; it's okay if there are small lumps.

          Spoon the dumpling batter over the chicken mixture, covering it as evenly as possible. The dumpling layer does not need to be perfect; it will spread as it bakes.

            Sprinkle the shredded cheddar cheese over the top of the dumpling layer.

              Bake in the preheated oven for 30-35 minutes, or until the dumplings are golden brown and a toothpick inserted into the dumpling comes out clean.

                Once baked, remove the casserole from the oven and let it cool for a few minutes.

                  Garnish with fresh parsley if desired before serving.
