Ingredients

1 package of spring roll wrappers (about 20 sheets)

1 cup ground beef or turkey

1 small onion, finely chopped

1 clove garlic, minced

1 packet taco seasoning

1/2 cup water

1 cup shredded cheddar cheese

1/2 cup black beans, rinsed and drained

1/2 cup corn (fresh or canned)

1/4 cup fresh cilantro, chopped (optional)

Olive oil for brushing

Salsa and sour cream for dipping

Instructions

Cook the Filling: In a large skillet over medium heat, add olive oil and sauté the chopped onion until translucent. Add minced garlic and cook for another minute.

Brown the Meat: Increase the heat to medium-high, add the ground beef or turkey, and cook until browned (about 5-7 minutes). Drain excess fat if necessary.

Add Seasoning: Stir in the taco seasoning and water; mix well. Reduce heat and let simmer for about 5 minutes until thickened.

Mix Additional Ingredients: Remove from heat and fold in the shredded cheddar cheese, black beans, corn, and cilantro until everything is well combined and the cheese is slightly melted.

Prepare Spring Roll Wrappers: Lay out one spring roll wrapper on a clean surface. Place about 2 tablespoons of the filling near one edge of the wrapper.

Roll the Sticks: Fold the bottom edge over the filling, then fold in the sides and roll tightly to form a stick. Repeat with remaining wrappers and filling.

Brush and Cook: Preheat the oven to 400°F (200°C). Place the prepared taco sticks on a baking sheet lined with parchment paper. Lightly brush the tops with olive oil.

Bake: Bake in the preheated oven for 15-20 minutes or until golden and crispy, turning them halfway through for even cooking.

Serve: Allow to cool for a couple of minutes before serving.
