4 large russet potatoes, thinly sliced

2 cups cooked ham, diced

1 cup sharp cheddar cheese, shredded

1 cup mozzarella cheese, shredded

1 onion, finely chopped

2 cups whole milk

3 tablespoons unsalted butter

3 tablespoons all-purpose flour

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 375°F (190°C). Grease a 9x13 inch baking dish with cooking spray or butter.

    In a large saucepan, melt the butter over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.

      Whisk in the flour, garlic powder, and onion powder, stirring continuously for about 1-2 minutes until it forms a roux.

        Gradually pour in the milk while whisking to avoid lumps. Continue cooking until the mixture thickens and bubbles, about 5 minutes. Season with salt and pepper.

          Remove the saucepan from heat, and stir in half of the cheddar and mozzarella cheeses until melted.

            Spread a layer of potato slices in the prepared baking dish, followed by a layer of diced ham. Pour some of the cheese sauce over, then repeat the layers until all potatoes and ham are used, finishing with cheese sauce on top.

              Sprinkle the remaining cheddar and mozzarella cheese over the final layer. Cover the dish with aluminum foil.

                Bake in the preheated oven for 45 minutes. Remove the foil and bake for an additional 15-20 minutes or until the top is golden and the potatoes are fork-tender.

                  Allow the dish to cool for a few minutes before serving. Garnish with freshly chopped parsley.
