Ingredients

1 pound breakfast sausage

8 large eggs

2 cups milk

1 cup shredded cheddar cheese

1 cup diced bell peppers (mix of red and green for color)

1 cup diced onions

2 cups cubed bread (preferably sourdough or French)

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

Fresh parsley for garnish

Instructions

Preheat the oven to 350°F (175°C).

In a large skillet over medium heat, cook the breakfast sausage until browned, breaking it up with a spoon as it cooks. Drain any excess fat and set aside.

In a large mixing bowl, whisk together the eggs, milk, garlic powder, onion powder, salt, and pepper until well combined.

Stir in the cooked sausage, diced bell peppers, diced onions, and cubed bread into the egg mixture. Mix until the bread is well coated and evenly distributed.

Grease a 9x13 inch baking dish and pour the mixture into the dish, ensuring it’s spread evenly.

Sprinkle the shredded cheddar cheese evenly over the top of the casserole.

Bake in the preheated oven for 30-35 minutes, or until the eggs are set and the top is golden and bubbly.

Remove from the oven and let cool for a few minutes before slicing.

Garnish with fresh parsley before serving.
