2 pounds baby potatoes, halved

1 teaspoon garlic powder

1 teaspoon smoked paprika

½ teaspoon onion powder

3 tablespoons olive oil

Salt and pepper to taste

1 cup shredded sharp cheddar cheese

½ cup grated Parmesan cheese

2 tablespoons fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 425°F (220°C).

    In a large mixing bowl, combine the halved baby potatoes, garlic powder, smoked paprika, onion powder, olive oil, salt, and pepper. Toss well to coat all potatoes evenly with the seasoning.

      Spread the seasoned potatoes out in a single layer on a baking sheet lined with parchment paper.

        Roast in the preheated oven for 25-30 minutes, or until the potatoes are golden brown and fork-tender. Make sure to toss them halfway through for even cooking.

          Remove the baking sheet from the oven and sprinkle the shredded cheddar cheese and grated Parmesan cheese evenly over the hot potatoes.
