4 cups all-purpose flour

1 packet (2 ¼ tsp) active dry yeast

1 ½ cups warm water (110°F or 45°C)

2 tablespoons olive oil, plus more for drizzling

1 tablespoon sugar

1 teaspoon salt

2 medium sweet onions, thinly sliced

1 ½ cups shredded mozzarella cheese

½ cup grated Parmesan cheese

1 teaspoon dried oregano

1 teaspoon garlic powder

Flaky sea salt for topping

Prepare the Yeast: In a large mixing bowl, combine warm water, sugar, and yeast. Let it sit for about 5-10 minutes, until it’s frothy.

    Make the Dough: Add olive oil, salt, and half of the flour to the yeast mixture. Stir until well combined. Gradually add the remaining flour until a sticky dough forms.

      Knead the Dough: Transfer the dough to a floured surface and knead for about 10 minutes, until smooth and elastic. Place the dough in a lightly oiled bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

        Sauté the Onions: In a skillet over medium heat, add a splash of olive oil and the sliced onions. Sauté for about 10-15 minutes until they are caramelized and golden. Remove from heat and set aside to cool slightly.

          Shape the Focaccia: Preheat your oven to 400°F (200°C). Once the dough has risen, punch it down and transfer it to a lightly greased baking sheet. Press it out to fit the sheet, forming dimples with your fingers across the surface.

            Add Toppings: Evenly distribute the sautéed onions over the dough, then sprinkle shredded mozzarella and grated Parmesan cheese on top. Finish with oregano, garlic powder, and a drizzle of olive oil. Sprinkle flaky sea salt over the entire surface.

              Second Rise: Allow the focaccia to rest for another 20 minutes while the oven heats, giving it a little more rise.

                Bake: Bake in the preheated oven for 20-25 minutes, or until the focaccia is golden brown and the cheese is bubbly.
