Cheesy Chicken Spinach and Artichoke Lasagna

9 lasagna noodles

2 cups cooked chicken, shredded

1 cup frozen spinach, thawed and drained

1 can (14 oz) artichoke hearts, drained and chopped

2 cups ricotta cheese

1 egg

2 cups mozzarella cheese, shredded

1 cup Parmesan cheese, grated

2 cloves garlic, minced

1 teaspoon Italian seasoning

1 cup marinara sauce

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat your oven to 350°F (175°C).

    In a mixing bowl, combine the ricotta cheese, egg, minced garlic, Italian seasoning, salt, and pepper. Mix until smooth.

      In another bowl, combine the shredded chicken, thawed spinach, chopped artichoke hearts, and half of the mozzarella cheese. Stir to combine, seasoning with salt and pepper to taste.

        Spread a thin layer of marinara sauce on the bottom of a 9x13-inch baking dish.

          Layer 3 lasagna noodles lengthwise over the sauce. Spread half of the ricotta mixture over the noodles, followed by half of the chicken, spinach, and artichoke mixture. Add a layer of marinara sauce and sprinkle some Parmesan cheese on top.

            Repeat the layering process: 3 more lasagna noodles, the remaining ricotta mixture, the remaining chicken mixture, marinara sauce, and a sprinkle of Parmesan cheese. Finish with a final layer of 3 noodles, the remaining marinara sauce, the rest of the mozzarella cheese, and a generous sprinkle of Parmesan cheese on top.

              Cover the baking dish with aluminum foil and bake for 25 minutes.

                After 25 minutes, remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden brown.

                  Allow the lasagna to cool for about 10 minutes before slicing. Garnish with fresh basil leaves if desired.
