Instructions
Preheat the oven to 350°F (175°C).
In a large mixing bowl, combine the shredded chicken, black beans, cooked rice, corn, salsa, cumin, and chili powder. Mix until well combined.
In a greased 9x13 inch casserole dish, layer 4 tortillas on the bottom, overlapping them as necessary.
Spread half of the chicken mixture over the tortillas. Sprinkle half of the cheddar and Monterey Jack cheese over the mixture.
Layer the remaining tortillas on top, followed by the second half of the chicken mixture. Top with the remaining cheese.
Cover the casserole with aluminum foil and bake in the preheated oven for 25 minutes.
Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden.
Once the casserole is done, let it cool for 5 minutes. Drizzle sour cream on top and garnish with fresh cilantro before serving.
