1 lb ground beef

1 cup shredded cheddar cheese

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon cumin

Salt and pepper to taste

6 large flour tortillas

1 cup sour cream (for serving)

Fresh cilantro, chopped (for garnish)

Instructions
 

In a large skillet over medium heat, add the ground beef, chopped onion, and minced garlic. Cook until the beef is browned and the onions are soft, about 5-7 minutes.

    Drain any excess fat from the skillet. Stir in smoked paprika, cumin, salt, and pepper. Mix well to combine, then remove from heat.

      Add the shredded cheddar cheese to the beef mixture and mix until the cheese is melted and everything is well incorporated.

        Lay a flour tortilla on a clean surface. Spoon about 1/4 of the beef and cheese mixture onto one edge of the tortilla. Roll it tightly, folding in the sides as you go, to create a roll-up. Repeat for all tortillas.

          Preheat a grill pan or skillet over medium heat. Place the roll-ups seam-side down on the pan. Cook for about 2-3 minutes per side until they are golden brown and crispy.

            Remove the roll-ups from the pan and let them cool slightly. Cut each roll-up in half on a diagonal for a beautiful presentation.

              Serve warm with sour cream on the side, garnished with fresh cilantro.
