1 lb ground beef

1 medium onion, diced

2 cloves garlic, minced

3 medium potatoes, peeled and diced

4 cups beef broth

1 cup shredded cheddar cheese

1 cup heavy cream

1 cup frozen mixed vegetables (carrots, peas, corn)

2 tablespoons olive oil

1 teaspoon dried thyme

Salt and pepper to taste

Fresh parsley for garnish

Instructions
 

In a large pot, heat olive oil over medium heat. Add the diced onion and cook until translucent, about 3-4 minutes.

    Add minced garlic and cook for another minute until fragrant.

      Add the ground beef to the pot, breaking it apart with a spoon. Cook until browned and no longer pink, about 5-7 minutes.

        Stir in the diced potatoes and pour in the beef broth. Add thyme, salt, and pepper to taste. Bring the mixture to a boil.

          Once boiling, reduce the heat to low, cover, and simmer for about 15 minutes, or until the potatoes are tender.

            Stir in the frozen mixed vegetables and cook for an additional 5 minutes.

              Slowly add the heavy cream and cheddar cheese, stirring until the cheese is melted and fully incorporated.

                Taste and adjust seasoning with more salt and pepper if necessary.

                  Serve hot, garnished with fresh parsley on top.
