Ingredients
  

1 cup warm water (110°F)

1 packet (2 ¼ teaspoons) active dry yeast

2 tablespoons granulated sugar

2 ½ cups all-purpose flour

1 teaspoon salt

¼ cup baking soda

1 cup shredded cheese (cheddar, mozzarella, or a blend)

1 egg (beaten, for egg wash)

Coarse sea salt (for topping)

Instructions
 

In a large mixing bowl, combine warm water, yeast, and sugar. Stir gently and let it sit for about 5 minutes until it becomes frothy.

    Add the flour and salt to the yeast mixture. Mix until a dough forms. Knead the dough on a lightly floured surface for about 5–7 minutes until it’s smooth and elastic.

      Place the dough in an oiled bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.

        Once the dough has risen, preheat your oven to 425°F (220°C).

          Divide the dough into 12 equal pieces. Flatten each piece into a disc and place a spoonful of shredded cheese in the center. Gather the edges and pinch to seal, forming a ball.

            In a large pot, bring 10 cups of water to a boil and add baking soda to the boiling water.

              Carefully drop each pretzel ball into the boiling water, cooking for about 30 seconds per side. Use a slotted spoon to remove them and place them on a baking sheet lined with parchment paper.

                Brush each pretzel ball with the beaten egg and sprinkle coarse sea salt on top.

                  Bake in the preheated oven for 12–15 minutes, or until golden brown.

                    Remove from the oven and allow to cool slightly before serving.
