Ingredients

1 large head of cauliflower, cut into florets

2 medium potatoes, peeled and diced

3 tablespoons unsalted butter

1/4 cup cream cheese (or Greek yogurt for a lighter option)

1/2 cup chicken or vegetable broth

3 garlic cloves, minced

Salt and pepper to taste

Fresh chives or parsley, chopped (for garnish)

Instructions

Steam the Vegetables: In a large pot, bring water to a boil and place a steamer basket over it. Add the cauliflower florets and diced potatoes. Cover and steam for about 15-20 minutes, or until both vegetables are tender when pierced with a fork.

Cook the Garlic: While the vegetables are steaming, melt the butter in a small saucepan over medium heat. Add the minced garlic and sauté for about 2 minutes until fragrant. Be careful not to burn the garlic.

Blend the Veggies: Once the cauliflower and potatoes are cooked, drain any excess water and transfer them to a large mixing bowl or food processor.

Combine Ingredients: Add the sautéed garlic with butter, cream cheese (or Greek yogurt), and chicken or vegetable broth to the vegetables. Season with salt and pepper.

Mash or Blend: Using a potato masher or food processor, blend until smooth and creamy. Adjust the texture by adding more broth if necessary to achieve your desired consistency.

Taste and Adjust: Taste the mash and adjust seasoning if needed. If you prefer it creamier, feel free to incorporate more cream cheese or butter.

Serve Warm: Transfer the creamy mashed cauliflower and potatoes into a serving bowl and garnish with freshly chopped chives or parsley.
