1 medium head of cauliflower (riced)

1 cup mixed vegetables (carrots, peas, corn)

2 large eggs

3 green onions, thinly sliced

2 cloves garlic, minced

2 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon sesame oil

1 tablespoon olive oil

Salt and pepper to taste

Optional: 1 teaspoon ginger, grated

Optional: Chopped cilantro for garnish

Instructions
 

Begin by preparing the cauliflower. Remove the leaves and stem, then cut it into florets. Pulse in a food processor until it resembles rice grains. If you don't have a food processor, you can grate it using a box grater.

    Heat 1 tablespoon of olive oil in a large non-stick skillet or wok over medium-high heat.

      Add the minced garlic and grated ginger (if using) to the skillet, sautéing for about 30 seconds until fragrant.

        Add the riced cauliflower to the skillet, stirring well to combine. Cook for 4-5 minutes until it becomes tender but not mushy.

          Push the cauliflower to one side of the skillet and crack the eggs into the empty side. Scramble the eggs until fully cooked, then mix into the cauliflower.

            Stir in the mixed vegetables, green onions, soy sauce, and sesame oil. Cook for another 2-3 minutes, allowing everything to heat through and combine. Season with salt and pepper to taste.

              Remove from heat and garnish with chopped cilantro if desired.
