1/2 cup shelled pistachios, roughly chopped

1 cup pomegranate seeds (about 1 medium pomegranate)

1/4 cup fresh mint leaves, finely chopped

2 tablespoons olive oil

1 tablespoon honey

1 tablespoon lemon juice
