1 cup granulated sugar (for caramel)

2 tablespoons water (for caramel)

1 cup sweetened condensed milk

1 cup whole milk

2 large eggs

1 teaspoon vanilla extract

1 cup all-purpose flour

1 teaspoon baking powder

1/4 teaspoon salt

1/2 cup light brown sugar (for muffin mixture)

1/2 teaspoon ground cinnamon

1/4 cup unsalted butter, melted

Prepare the Caramel: In a small saucepan over medium heat, combine the granulated sugar and water. Stir until the sugar has dissolved. Stop stirring and let the mixture cook until it turns a golden caramel color, about 5-7 minutes. Be careful not to burn it. Once done, quickly pour the caramel into a muffin tin (12 cups), tilting the tin to coat the bottoms evenly. Set aside to cool and harden.

    Make the Flan Mixture: In a mixing bowl, whisk together the sweetened condensed milk, whole milk, eggs, and vanilla extract until smooth. Set aside.

      Prepare the Muffin Batter: In another large bowl, combine the flour, baking powder, salt, light brown sugar, and ground cinnamon. Mix well. Create a well in the center and add the melted butter and the flan mixture. Gently fold until just combined; do not overmix.

        Assemble the Muffins: Pour the muffin batter over the hardened caramel in each muffin cup, filling each cup about 3/4 full.

          Bake: Preheat your oven to 350°F (175°C) and bake the muffins for 20-25 minutes or until a toothpick inserted in the center comes out clean. If they begin to brown too quickly, cover them loosely with aluminum foil.

            Cool and Serve: Let the muffins cool in the pan for 5 minutes before inverting them onto a serving platter. Allow them to cool for another 10 minutes.

              Serving Suggestion: Serve warm or at room temperature, drizzled with any excess caramel that may have pooled while cooling.
