4 large Portobello mushrooms, stems removed

1 cup cherry tomatoes, halved

1 cup fresh mozzarella balls, halved (bocconcini)

1/4 cup fresh basil leaves, chopped

2 tablespoons balsamic glaze

2 tablespoons olive oil

1 teaspoon garlic powder

Salt and pepper to taste

1/4 teaspoon crushed red pepper flakes (optional, for a spicy kick)

Instructions
 

Preheat your oven to 375°F (190°C).

    Clean the Portobello mushrooms with a damp cloth and place them, gill side up, on a baking sheet lined with parchment paper.

      Drizzle the olive oil evenly over the mushrooms and sprinkle with garlic powder, salt, and pepper. If desired, add crushed red pepper flakes for a bit of heat.

        In a mixing bowl, combine the cherry tomatoes, mozzarella balls, and chopped basil. Drizzle with balsamic glaze and toss gently to coat.

          Fill each mushroom cap generously with the Caprese filling mixture.

            Bake in the preheated oven for 20-25 minutes, or until the mushrooms are tender and the cheese is melted and bubbly.

              Remove from the oven and allow to cool for a couple of minutes before serving. Drizzle with additional balsamic glaze if desired.
